Making Apple Coleslaw with Kids!

Cabbage is the main ingredient in coleslaw, which we grew in the garden over the summer.   We were able to pick cabbage and make apple coleslaw during our classroom taste tests.  The best part was we were able to have the children help cut the apples, coleslaw and squeeze out lemon juice.

We encourage you to try this recipe at home.

Apple Coleslaw

  • 1 head of local cabbage (shredded)
  • 2 small local apples (grated)
  • ½ cup of mayonnaise
  • ½ cup carrots (shredded)
  • 2 teaspoons of fresh squeezed lemon juice
  • Salt & Pepper

Directions: Mix the apples, carrots, and cabbage in large bowl. Then add the lemon juice and mayonnaise. Toss all of the ingredients together until they’re thoroughly mixed.

The apple coleslaw ingredients can be altered to suit your kids’ taste buds. Enjoy!

Intern Spotlight – Laura Berry

We rely on talented, passionate interns to help our programs thrive.  This summer, we were fortunate to have Laura Berry help us with marketing and media.  Laura’s main task was helping us communicate to parents, students and the community about what we were doing to connect children to healthy food and nature.  To do this, Laura captured images, wrote blogs, promoted events and assisted with our programs.

Laura was featured in this fall’s issue of UW-La Crosse CLS Capstone FALL 2016 newsletter.  Laura is on the cover and you can read about her experience on pages 7-10.laura

Do you have a passion for connecting children to healthy food and nature?  If so, consider interning for us.

We have 2 Garden Education intern positions and 1 Marketing intern position open for this upcoming spring.  Garden Education interns spend approximately 6 hours a week creating and teaching lessons to area elementary school students about healthy food and nature.   Marketing interns spend time creating photo journalism blogs, professional social media posts, capturing images and assisting with our programs.
